Pestki dyni zmiel na mąkę. Aquafabę ubijaj mikserem około pól minuty, dodaj cukier i ubijaj kolejne 2 - 3 minuty do gęstej piany.
W misce umieść mąkę kokosową, zmielone pestki dyni i sól, wymieszaj. Dodaj ubitą aqaufabę i delikatnie wymieszaj. Wyrób ciasto rękoma. Formuj z ciasta kulki wielkości orzecha włoskiego, lekko spłaszcz, udekoruj pestkami dyni. Piecz w nagrzanym piekarniki do 180 stopni Celsjusza bez termoobiegu, piecz 14 - 15 minut. Nie piecz zbyt długo, by ciastka nie były zbyt twarde. Wyjmij z piekarnika i ostudź.

230 g pumpkin seeds, shelled
30 g coconut flour
80 g sugar
8 flat spoons of aquafabs (water/pouring from a chickpeas can) or 2 small eggs
1/3 teaspoon salt
pumpkin seeds to decoration
Grind pumpkin seeds into flour. Whip/whisk aquafaba with a mixer for about half a minute, add sugar and whisk 2 - 3 minutesmore into the thick foam.
Put coconut flour, ground pumpkin seeds and salt in the bowl, mix. Add beaten aqaufaba and mix gently. Knead dough with hands. Form size of a walnut balls from the cake, slightly flatten, decorate with pumpkin seeds. Bake cookies in preheated oven to 180 degrees Celsius without air flow, bake 14 - 15 minutes. Don't bake the cookies too long to be hard. Remove the cookies from the oven and cool.
