Fasolka po bretońsku. Beans with sausage and bacon (in Poland called Breton beans).


4 - 6 porcji
400 g fasoli "piękny Jaś"
2 liście laurowe
4 ziarna angielskie
300 g boczku
300 g kiełbasy
2 cebule
1 puszka krojonych pomidorów (400 g)
3 łyżki koncentratu pomidorowego
3 łyżeczki suszonego majeranku
sól i świeżo mielony pieprz do smaku

Dzień wcześniej fasolę umieść w misce i zalej wodą, 10 cm nad poziom fasoli. Następnego dnia odlej wodę. Namoczoną fasolę umieść w garnku, dodaj 1 litr wody i dwie szczypty soli. Gotuj półtorej godziny na średnim ogniu pod przykryciem. W międzyczasie bekon pokrój w drobną kostkę, podsmaż na patelni. Na wytopionym z boczku tłuszczu podsmaż pokrojoną w drobną kostkę kiełbasę, dodaj pokrojoną w kostkę cebulę i smaż jeszcze 5 minut. Odcedź wodę od ugotowanej fasoli. Dodaj podsmażny boczek, kiełbasę z cebulą, pomidory razem z zalewą i koncentrat pomidorowy oraz majeranek. Dopraw solą i pieprzem. Wymieszaj i gotuj jeszcze 15 minut na małym ogniu.

400 g of white beans
2 bay leaves
4 grains of allspice
300 g of bacon
300 g of sausage
2 onions
1 can of cut tomatoes (400 g)
3 tablespoons tomato paste
3 teaspoons dried marjoram
salt and freshly ground pepper to taste

Place bean in a bowl and pour the water 10 cm above the beans. Next day drain the water. Put soaked bean in a pot, add 1 liter of water and two pinch of salt. Cook the bean for one and a half hours on medium heat, under cover. In the meantime cut bacon into small cubes, fry in a frying pan. To melted bacon fat add diced sausage and fry, add diced onion and fry for 5 minutes more. Drain the water from the cooked beans. To cooked bean add bacon, sausage with onions, tomatoes, tomato paste and marjoram.
Season with pepper and salt. Stir and cook for 15 minutes more on low heat.
