Pieczone ratatouille z kaszą kukurydzianą. Baked Ratatouille with Corn Porridge.

3 porcje
1 duży bakłażan
1 duża czerwona papryka
2 średnie pomidory
2 małe cukinie
1 cebula
2/3 łyżeczki suszonego rozmarynu
1 łyżeczka suszonego tymianku
oliwa do skropienia
sól i pieprz do smaku

kaszka kukurydziana
150 g kaszki kukurydzianej
800 ml bulionu (1 czubata łyżka bezglutenowego bulionu + 800 ml gorącej wody)
2 - 3 łyżki masła klarownego (ghee)
szczypta soli

Warzywa umyj. Bakłażana pokrój na cztery części i na mniejsze kawałki. Cukinie przekrój wzdłuż na pół, potem w księżyce. Paprykę pokrój w szerokie paski a pomidora w kliny. Cebulę obierz i pokrój w piórka.
Bakłażana, paprykę, cukinię i cebule przełóż na dużą blachę wyłożoną pergaminem. Posyp rozmarynem i tymiankiem, skrop oliwą i dopraw solą i pieprzem. Piecz warzywa w nagrzanym do 205 stopni Celsjusza piekarniku bez termoobiegu. Po 20 minutach wyjmij warzywa z piekarnika, wymieszaj, dodaj pomidora i wstaw na kolejne 20 minut. Potem zmniejsz temperaturę do160 stopni i piecz 15 minut.
W międzyczasie zagotuj bulion, dodaj kaszkę kukurydzianą szybko mieszając. Zmniejsz ogień do minimum i gotuj około 30 minut, mieszaj od czasu do czasu. Pod koniec gotowania dodaj masło i dopraw solą. Kaszkę przełóż na talerze. Na wierzchu umieść ratatouille.

1 large eggplant
1 large red pepper
2 medium tomatoes
2 small courgettes/zucchini
1 onion
2/3 teaspoon dried rosemary
1 teaspoon dried thyme
oil to sprinkling
salt and pepper to taste

corn porridge
150 g corn meal
800 ml broth (1 heaped tablespoon gluten-free broth + 800 ml hot water)
2 - 3 tablespoons ghee
pinch of salt

Wash the vegetables. Cut eggplant into four pieces and into smaller pieces. Cut courgettes along in half, then in moons. Cut peppers into wide strips and tomato into wedges. Peel onion and cut into feathers.
Put eggplant, peppers, zucchini and onions into a large baking tray lined with parchment paper. Sprinkle with rosemary and thyme, drizzle with oil and season with salt and pepper. Bake vegetables in a preheated oven to 205 degrees Celsius without air flow. After 20 minutes, remove the vegetables from the oven, mix, add tomato and place for 20 minutes more. Then reduce the temperature to 160 degrees and bake 15 minutes.
In the meantime, boil the broth, add cornmeal quickly stirring. Reduce the heat to a minimum and cook for about 30 minutes, mix from time to time. At the end of cooking, add butter and season with salt. Put the porridge into plates. Place the ratatouille on top.

Placek grysik z jabłakmi i jeżyną, bez pieczenia. No bake corn porridge (corn grits) cake with apples and blackberry.



200 g herbatników maślanych bezglutenowe*
100g roztopionego masła

1 kg jabłek (7 sztuk), ja proponuje dać 9 jabłek
2 -3 łyżki cukru
1 galaretka cytrynowa, bez sztucznych barwników i bez glutaminianu sodu

250 g jeżyn leśnych, ogrodowej trzeba więcej około 350 g

1 szklanka kaszki kukurydzianej
1 litr mleka (ja użyłam 500 ml mleka i 500 ml wody)
50 g masła
5 łyżek cukru
4 łyżki wiórków kokosowych

1 galaretka cytrynowa, bez sztucznych barwników i bez glutaminianu sodu
1 jabłko
sok z 1/2 cytryny

tortownica o średnicy 24 cm
*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).  

Herbatniki pokrusz przy pomocy miksera, dodaj roztopione masło, wymieszaj dokładnie. Dno i boki tortownicy wyłóż papierem do pieczenia. Wysyp  pokruszone herbatniki na dno tortownicy i rozłóż równomiernie po spodzie, dociśnij łyżką. Jabłka obierz, usuń gniazda z pestkami, pokrój jabłka w kostkę. Przełóż do garnka i zasyp 2 łyżkami cukru. Podgrzewaj przez 6 - 7 minut aż jabłka będą miękkie, ciągle mieszaj, by jabłka równomiernie zmiękły. Dodaj jedną galaretkę cytrynową, w proszku - nie rozpuszczoną, wymieszaj z gorącymi jabłkami. Zagotuj mleko z pięcioma łyżkami cukru, masłem i wiórkami kokosowymi, dodaj kaszkę, gotuj i mieszaj aż kaszka zgęstnieje.
Na warstwę herbatników wyłóż połowę jabłek z galaretką, posyp połową jeżyn, następnie połowę kaszy, ponownie warstwa jabłek, pozostałe jeżyny i znowu kasza. Odstaw do ostygnięcia, chłodne ciasto wstaw do lodówki. Po 2 godzinach, gdy ciasto będzie już zimne rozpuść galaretkę cytrynową w 400 ml gorącej wody, ostudź. Jabłko obierz, pokrój w plasterki, polej sokiem z cytryny by nie ściemniało, ułóż na kaszy. Zalej ciasto tężejącą galaretką cytrynową. Przykryj ciasto folią, by nie wchłonęło innych zapachów, wstaw do lodówki.

100g melted butter

1 lemon jelly, no artificial colors and no
monosodium glutamate
250 g forest blackberries, garden blackberries you need more about 350 g

1 glassful corn porridge (
corn grits), originally - semolina, I chose corn porridge because I want to bake gluten-free cake
1 liter of milk (I've used 500 ml of milk and 500 ml of water)
50 g of butter
5 tablespoons of sugar
4 tablespoons
coconut shreds

1 lemon jelly, no artificial colors and no
monosodium glutamate
1 apple
juice of half a lemon

cake-pan with a diameter of 24 cm

* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).  

Break biscuits with blender, add melted butter and mix thoroughly. Lay out the bottom and sides of cake-pan with baking paper. Strew crushed biscuits on the bottom of the cake-pan and dispose evenly over the bottom, press biscuits.
Peel apples, core them, cut into cubes. Transfer apples to a pot and sprinkle with 2 tablespoons of sugar. Cook apples for 6 - 7 minutes until apples are tender (soft), stirring constantly to soften the apples evenly. Add one lemon jelly, powder - not melted, stir jelly and apples. Boil the milk with five tablespoons of sugar, butter and coconut shreds, add the corn porridge, heat and stir until the porridge get thicker.
Put half of the apples with jelly on the layer of biscuits, sprinkle with half the blackberries, then put half of the corn porridge, again put the layer of apples, sprinkle with the rest of the blackberries and put grits. Leave cake to cool, put quenched cake in fridge. After 2 hours when the cake is cold, dissolve lemon jelly in 400 ml of hot water, leave to cool. Peel apple, cut into slices, sprinkle apples with the lemon juice, they do not darken, place them on corn porridge.
When the lomon jelly will gel pour cake. Cover the cake with foil, it will not absorb other aroma, put cake in the fridge.
