180 g miksu mąk bezglutenowych

Masa serowa:
1 kg twarogu sernikowego
180 g cukru
4 jajka
200 ml śmietanki 30%
1 budyń waniliowy bez cukru, bezglutenowy
2 łyżki soku z limonki
1 łyżeczka ekstraktu waniliowego
Mus limonkowy:
250 ml śmietanki 30%
250 g mascarpone
80 g cukru pudru
4 łyżki soku z limonki
2 łyżeczki żelatyny
3 łyżki gorącej wody
tortownica 24 cm
Spód. W misce umieść mąkę, cukier, jajka i pokrojone na kawąłki zimne masło. Ugnieć ciasto na gładką masę, na koniec dodaj kwasna smietane i ugnieć ponownie. Wstaw do lodówki na dwie godziny do schłodzenia.
Masa serowa. Twaróg wymieszaj z cukrem i budyniem waniliowym. Dodawaj po jednym jajku, miksując krótko tylko do połączenia. Wlej śmietankę, dodaj sok oraz wanilię. Wymieszaj krótko miksując.
Wyjmij z lodówki ciasto na spód. Zetrzyj na tarce do tortownicy wyłozonej pergaminem, ugnieć delikatnie i wyrownaj. Masę serową wylej na spód ciasta.
Piecz w 165°C przez około 60–70 minut, aż brzegi będą ścięte, a środek nadal lekko sprężysty.
Po upieczeniu uchyl drzwi piekarnika i pozostaw sernik w środku na około 20 minut. Całkowicie wystudź i schłodź.
Żelatynę rozpuść w zimnej wodzie i lekko podgrzej, aż żelatyna sie rozpuści. Uwaga: Żelatyny nie mozna zagotować, tylko lekko podgrzać. Śmietankę ubij z mascarpone i cukrem pudrem na gęsty krem.
Dodaj sok z limonki. Do żelatyny dodaj 2–3 łyżki masy limonkowej, wymieszaj, a następnie wlej całość do kremu i krótko zmiksuj. Mus rozprowadź na zimnym serniku.
Wstaw do lodówki na minimum 4 godziny, najlepiej na całą noc.
Crust:
180 g gluten-free flour mix
60 g gluten-free rice flour
2 small eggs
120 g cold butter
2 tablespoons sugar
2 tablespoons sour cream or coconut milk
pinch of salt
Cheesecake filling:
1 kg cheesecake curd cheese
180 g sugar
4 eggs
200 ml heavy cream (30% fat)
1 packet sugar-free, gluten-free vanilla pudding mix
2 tablespoons of lime juice
1 teaspoon of vanilla extract
Lime mousse:
250 ml heavy cream (30% fat)
250 g mascarpone
80 g icing sugar
4 tablespoons of lime juice
2 teaspoons of gelatin
3 tablespoons of hot water
24 cm springform pan
Crust: Place flour, sugar, eggs, and cold butter (cut into pieces) in a bowl. Knead mixture into a smooth dough. Finally, add sour cream and knead again. Place in the fridge to chill for two hours.
Cheesecake filling: Mix cheese with sugar and vanilla pudding mix. Add eggs one by one, mixing briefly just until combined. Pour in the heavy cream and add lime juice and vanilla. Mix briefly.
Remove the dough from the fridge. Grate it into a parchment-lined springform pan, then gently press it down and level it out. Pour cheesecake filling over the crust. Bake at 165°C for about 60–70 minutes, until the edges are set but the center remains slightly springy.
After baking, crack the oven door open and leave the cheesecake inside for about 20 minutes. Let it cool completely and chill.
Dissolve gelatin in cold water and warm it gently until dissolved. Note: Do not boil the gelatin; heat it only slightly. Whip cream with mascarpone and icing sugar until a thick cream forms.
Add the lime juice. Stir 2–3 tablespoons of the lime mixture into the gelatin, then pour the mixture into the cream and briefly mix together. Spread the mousse over the chilled cheesecake.
Refrigerate for at least 4 hours, preferably overnight.
