Wielkanocna tarta z jajkiem. Easter Egg Quiche.

spód
120 g bezglutenowej skrobi kukurydzianej
40 g bezglutenowej maki ryżowej
35 g bezglutenowej mąki gryczanej
100 g masła klarowanego, zimne
1 jajko 5 łyżek mleka kokosowego, minimum 80%
szczypta soli

nadzienie
300 g szpinaku
1 cebula, pokrojona w słupki
2 ząbki czosnku
2 łyżki oliwy
sól, pieprz do smaku
3/4 łyżeczki gałki muszkatołowej
150 g śmietany 18%
4 jajka
3 ugotowane jajka, pokrojone w plastry o grubości 1 cm

Wszystkie składniki ciasta na spód połącz i ugnieć. Owiń w folię spożywczą i włóż do lodówki na minimum pół godziny.
Na patelni zeszklij cebulę, dodaj czosnek i szpinak, duś wszystko około 3 minuty. Zestaw z ognia, dopraw solą.
Jajka wymieszaj z śmietaną, dopraw solą, pieprzem i gałka muszkatołową.
Ciasto rozwałkuj, przełóż na formę. Na ciasto włóż szpinak, zalej masą jajeczną. Na wierzchu umieść ugotowane jajko. Tartę piecz w nagrzanym piekarniku do 185 stopni Celsjusza z termoobiegiem. Po 10 minutach zmniejsz temperaturę do 165 stopni Celsjusza z termoobiegiem i piecz jeszcze 25 minut.
Podawaj po 15 minutach.

crust
120 g of gluten-free corn starch 
40 g of gluten-free rice flour 
35 g of gluten-free buckwheat flour 
100 g of ghee, cold 
1 egg 
5 tablespoons coconut milk, minimum 80% 
pinch of salt 

filling 
300 g of spinach 
1 onion, cut into sticks 
2 cloves of garlic 
2 tablespoons of olive oil salt and pepper to taste 
3/4 teaspoon of nutmeg 
150 g of cream 18% 
4 eggs 
3 boiled eggs, cut into slices 1 cm thick 

Combine all the dough ingredients and knead. Wrap in food wrap and put in the fridge for a minimum of half an hour.
Soften the onion in a frying pan, add garlic and spinach, stew for about 3 minutes. Set from the fire, season with salt.
Mix eggs with cream, season with salt, pepper and nutmeg.
Roll out the dough, transfer it to the form. Put the spinach on the dough, pour over the egg mixture. Place the boiled egg on top. Bake the tart in a preheated oven to 185 degrees Celsius with air flow. After 10 minutes, reduce the temperature to 165 degrees Celsius with air flow and bake for 25 minutes more. Serve after 15 minutes.

Tartaletki z pomidorkami koktajlowymi i selerem naciowym. Cherry Tomatoe and Celery Tartlets. Gluten-free!


Obiad dla 2 osób. Koszt 15 zł.

170 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
80 g mąki ryżowej *
125 g zimnego masła  
1 jajko  
pół łyżeczki soli
2 łyżki kwaśnej śmietany

250 g pomidorów koktajlowych (lub daktylowych)
5 dużych łodyg selera naciowego  
200 g (ml) gęstej kwaśnej śmietany  
1 jajko
sól i pieprz do smaku
suszony estragon  
oliwa do smażenia

Mąkę przesiej. Zimne masło posiekaj, połącz z mąką, dodaj sól i jajko,wyrób na gładką masę. Dodaj śmietanę i ponownie zagnieć. Wstaw do lodówki na 30 minut. Wyjmij ciasto z lodówki, wyłóż na formy do pieczenia i wstaw ponownie do lodówki na 15 minut. Schłodzone ciasto nakłuj widelcem, piecz w 190 stopniach Celcjusza (z termoobiegiem) przez 10 minut. Seler naciowy pokrój w paski, podsmaż na patelni około 7 - 10 minut. Do usmażonego selera dodaj śmietanę i jajko, dokładnie wymieszaj, dopraw solą i pieprzem. Pomidorki koktajlowe pokrój na połówki. Wyjmij upieczone spody ciasta, zmniejsz temperaturę do 170 stopni Celcjusza. Na spody tart połóż nadzienie z selerem naciowym, połówki pomidora, posyp suszonym estragonem. Piecz 20 minut.

250 g cherry tomatoes (or date tomatoes)
5 large stalks of celery
 

200 g (ml) thick sour cream 
1 egg
salt and pepper to taste 
dried tarragon
oil for frying

Sieve the flour. Chop cold butter, combine it with the flour, add salt and egg, knead to a smooth mass. Add sour cream and knead again. Put in the fridge for 30 minutes. Remove the dough from the fridge, lay the dough off baking molds and put back them in the fridge for 15 minutes. Puncture chilled dough with a fork, bake at 190 degrees Celsius (with air flow) 10 minutes. Cut celery into strips, fry it in a pan about 7 - 10 minutes. To fried celery add the cream and egg, mix all well, season with salt and pepper. Cut cherry tomatoes in half. Remove the baked cake bases, reduce the temperature to 170 degrees Celsius. On each tart base put stuffing with celery, cherry tomatoes halves, sprinkle with dried tarragon. Bake 20 minutes.

Tartaletki z dynią i burakami. Pumpkin Beetroot Tartlets.

125 g zimnego masła
1 jajko
pół łyżeczki soli
3 łyżki kwaśnej śmietany

1000 g dyni (po obraniu i usunięciu pestek waży 500 g)
500 g buraków (3 średniej wielkości sztuki)
120 g sera camembert
1/2 czerwona cebula
12 łyżeczek kwaśnej śmietany
kilka gałązek rozmarynu
oliwa do pieczenia

Dynię obierz, usuń pestki, pokrój na kawałki. Buraka obierz, pokrój w plastry a później na ćwiartki. Cebulę pokój w słupki (piórka). Warzywa umieść na tacy do zapiekania, skrop oliwą i posyp świeżym rozmarynem. Piecz w nagrzanym piekarniku do 180 stopni Celsjusza z termoobiegiem 30 minut, aż warzywa będą miękkie.
Mąkę przesiej. Zimne masło posiekaj, połącz z mąką, dodaj sól i jajko,wyrób na gładką masę. Dodaj śmietanę i ponownie zagnieć. Ciasto wyłóż na formy do pieczenia i wstaw do lodówki na 40 minut. Schłodzone ciasto nakłuj widelcem, piecz w nagrzanym piekarniku do 180 stopni Celsjusza z termoobiegiem przez 15 minut. Wyjmij upieczone spody ciasta, zmniejsz temperaturę do 160 stopni Celsjusza. Na spody tart połóż upieczone warzywa, dopraw solą i pieprzem, polej każdą tartę dwiema łyżeczkami kwaśnej śmietany, na wierzchu połóż plaster sera camembert i rozmaryn. Piecz 15 minut.

500 g beetroots (3 medium sized)
120 g camembert cheese
1/2 red onion

12 teaspoons of sour cream 
few sprigs of rosemary

Peel the pumpkin, remove the seeds, cut into pieces. Peel beets, cut into slices and then into quarters. Cut onion in columns (pen). Place the vegetables on a baking tray, drizzle with olive oil and sprinkle with fresh rosemary. Bake in a preheated oven to 180 degrees Celsius with air flow for 30 minutes until vegetables are soft.
Sieve the flour. Chop cold butter, combine it with the flour, add salt and egg,
knead to a smooth mass. Add sour cream and knead the dough again. Lay the dough off on baking molds and put them in the fridge for 40 minutes. Puncture chilled dough with a fork, bake in a preheated oven to 180 degrees Celsius with air flow for 15 minutes. Remove the baked cake bases, reduce the temperature to 160 degrees Celsius. Put roasted vegetables on the tart bases, season with salt and pepper, pour each tart over  two teaspoons of sour cream, on top put slice of cheese and rosemary. Bake 15 minutes.

Tarta warzywna z pomidorami i jarmużem. Tomatoes kale quiche.

Ciasto kruche
160 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
30 g mąki ryżowej
30 g mąki gryczanej*
30 g mąki z amarantusa*
150 g masła bez laktozy
1 jajko
1/2 łyżeczki soli
3 - 5 łyżek kwaśnej śmietany

Farsz
120 g jarmużu
6 jajek
220 g jogurtu greckiego
3 pomidory pokrojone w plastry
1 łyżeczka granulowanego czosnku lub 2 ząbki czosnku przeciśnięty przez praskę
sól
świeżo zmielony pieprz
2 łyżki oleju
czarny sezam do posypania

Ciasto: Mąkę przesiej do miski. Masło (temperatura pokojowa) posiekaj na małe kawałki i dodaj do mąki. Dodaj sól, jajko i śmietanę. Całość zagniataj  tak długo aż uzyskasz gładkie ciasto. Wyłóż ciasto na formę do pieczenia i wstaw do lodówki na 30 - 40 minut. Rozgrzej piekarnik do 180 Celsjusza z termoobiegiem. Schłodzone ciasto piecz 10 minut, aż będzie lekko rumiane. Wyjmij ciasto z piekarnika.
Farsz: Na oleju usmaż jarmuż, około 3 minut, ciągle mieszaj. Jajka i jogurt dokładnie wymieszaj, dodaj czosnek, dopraw solą i pieprzem. Na podpieczony spód wyłóż jarmuż, zalej masą jajeczną, na wierzch połóż plastry pomidora, posyp solą i pieprzem. Piecz 30 minut w temperaturze 170 stopni Celsjusza z termoobiegiem. Przed podaniem posyp sezamem.

Stuffing
120 g of kale

220 g of Greek yogurt
3 sliced ​​tomatoes (red and kumato)
1 teaspoon of granulated garlic or 2 cloves of garlic, pressed

Dough: Sift (sieve) the flour into a bowl. Chop butter (room temperature) into small pieces and add to flour. Add salt, egg and sour cream.
Knead the dough so long until you get a smooth dough. Put the dough on a baking mold and cool in the fridge for 30 - 40 minutes. Preheat the oven to 180 degrees of Celsius with air flow. Bake chilled dough 10 minutes until it will be lightly browned. Remove the cake from the oven.
Stuffing: Fry kale in oil, about 3 minutes, stirring constantly. Mix egg and
yogurt thoroughly, add the garlic, season with salt and pepper. Put fried kale on quiche base, cover with egg mass, put tomato slices on the top, sprinkle with salt and pepper. Bake 30 minutes at 170 degrees of Celsius with
air flow. Before serving sprinkle with black sesame seeds.

100 g zimnego masła
1 jajko
1/3 łyżeczki soli

450 g mrożonego brokuła
400 g upieczonej dyni, pokrojona w kostkę
rozmaryn
300 g gęstej kwaśnej śmietany
4 jajka
2 ząbki czosnku, przeciśnięty przez praskę
1/3 łyżeczki gałki  muszkatołowej
sól, pieprz do smaku
120 g startego żółtego sera

Zimne masło posiekaj, dodaj mąkę, sól i jajko, wyrób ciasto. Dodaj śmietanę i ponownie wyrób ciasto. Schłódź ciasto w lodówce przez pół godziny. Schłodzone ciasto wyłóż na blachę do pieczenia. Piecz w nagrzanym do 200 stopni Celsjusza piekarniku przez 12 minut, z termoobiegiem. Brokuł ugotuj w wodzie z szczyptą soli. 1/3 ugotowanego brokułu odłóż, pozostały brokuł rozdrobnij. Jajka wymieszaj z kwaśną śmietaną, dodaj czosnek i gałkę muszkatołową, dopraw sola i pieprzem. dodaj rozdrobniony brokuł, wymieszaj. Na upieczony spód ciasta połóż upieczoną dynię, posyp rozmarynem. Polej masą śmietanowo jajeczną z brokułem. Posyp startym serem, na wierzchu ułóż kawałki brokuła. Piecz tartę w 170 stopniach Celsjusza przez 30 minut, z termoobiegiem.

2 cloves garlic, crushed
1/3 teaspoon of nutmeg

120 g grated cheese

Chop cold butter, add the flour, salt and egg,
knead a dough. Add the cream and knead the dough again. Chill the dough in a fridge for half an hour. Lay the chilled dough on the baking sheet. Bake in a preheated oven to 200 degrees Celsius for 12 minutes, with air flow. Cook broccoli in water with a pinch of salt. 1/3 of the cooked broccoli leave over, flake (crush) the remaining broccoli. Mix the eggs with sour cream, add the garlic and nutmeg, season with salt and pepper. Add flaked broccoli, stir. On crust put roasted pumpkin, sprinkle with rosemary. Tarta z białymi szparagami, serem camembert i boczniakami. White asparagus camembert cheese and oyster mushrooms Quiche.

Kruche ciasto:
140  g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
90 g mąki ryżowej*
4 łyżki amarantusa ekspandowanego
150 gram masła
1/2 łyżeczka soli
1 jajko
2 – 3 łyżki gęstej śmietany 18%

Farsz:
200 gram śmietany 18%
3 jajka
150  gram sera camembert, w oryginale był ser feta
sól
świeżo mielony pieprz
6 – 7 pomidorków koktajlowych przekrojonych na pół
10 -12 obranych białych szparagów poprzecinanych na pół (nie gotowałam)
1 - 2 gałązki świeżego rozmarynu
½ cebuli
300 g grzybów boczniaki pokrojone w szerokie paski, w oryginale kilkanaście małych pieczarek pokrojonych w plasterki
2 ząbki czosnku
2 łyżki masła do smażenia grzybów i cebuli

Ciasto: Mąkę przesiewamy do miski. Masło rozdzielamy na małe kawałki i dodajemy do mąki oraz amarantusa. Dodajemy sól, jajko i śmietanę. Całość zagniatamy do uzyskania gładkiej masy. Wstawiamy do lodówki na ok 15-20 minut. Rozgrzewamy piekarnik do 190 C z termoobiegiem. Wyjmujemy ciasto z lodówki. Rozwałkowujemy je na placek o średnicy większej niż forma tarty. Wykładamy formę ciastem, dokładnie rozprowadzając je po bokach formy. Wkładamy formę z ciastem na kilka minut do lodówki. Spód dziurkujemy widelcem. Pieczemy tartę ok. 10 - 12 minut, aż będzie lekko rumiana. Wyjmujemy ciasto z piekarnika. Zmniejszamy temperaturę do 170 stopni Celsjusza.
Farsz: na maśle smażymy pokrojone w paski grzyby z posiekanym czosnkiem. Dodajemy sól i pieprz. Gdy będą miękkie zdejmujemy z patelni. Na tej samej patelni smażymy pokrojoną w kostkę cebulę, solimy. Gdy się zeszkli dodajemy pieczarki i smażymy razem jeszcze około 2 minut. Studzimy. W misce dokładnie mieszamy śmietanę, jajka, sól, pieprz. Pomidorki kroimy na połówki. Szparagi obieramy do połowy wysokości, kroimy wzdłuż, a następnie na pół.
Układamy farsz: Na upieczone ciasto kładziemy grzyby z cebulą. Zalewamy masą ze śmietany i jajek. Układamy szparagi, pomidorki koktajlowe, kawałki sera camembert i gałązki rozmarynu. Pieczemy ok. 30 minut w temperaturze 170 stopni Celcjusza z termobiegiem.

Zamiast pieczarek użyłam grzyby boczniaki, do masy jajecznej dodałam 3 jajka a nie dodałam sera feta, w oryginale to 200 g sera feta.

6 - 7 cherry tomatoes, halved
10 to 12 peeled white asparagus
1 - 2 sprigs fresh rosemary
½ onion
300 g oyster mushrooms, cut into wide strips, the originally small mushrooms, sliced
2 cloves of garlic
2 tablespoons butter for frying mushrooms and onions

Dough: Sift flour into a bowl. Split butter into small pieces and add to the flour and amaranthus. Add salt, egg and cream. Knead a smooth dough. Put it in the fridge for about 15-20 minutes. Preheat the oven to 190 C with air flow. Remove the dough from the fridge. Roll the dough on the cake with a diameter greater than the grated form.
Put the dough on a baking pan, carefully spread it on the sides of the mold. Put the dough for a few minutes in the fridge. Puncture the cooled dough with a fork. Bake the tart about 10 - 12 minutes, until will be lightly brown. Remove the tart from the oven. Reduce temperature to 170 degrees.
Stuffing: Fry mushrooms with chopped garlic
in butter. Add salt and pepper. When they are soft take off from the pan. At the same pan fry the diced onion, season with salt. Add mushrooms and fry together about 2 minutes more. Cool. In a bowl, mix thoroughly cream, eggs, season with salt and pepper. Cut tomatoes in half. Peel the asparagus, cut in half lengthwise.
Baking of stuffing: Put mushrooms and onions on baked dough. Pour cream and eggs. Top with asparagus, cherry tomatoes, pieces of camembert cheese and rosemary sprigs. Bake for about 30 minutes at a temperature of 170 degrees Celsius with air flow.

Zimne masło pokrój na małe kwadraciki. Mąkę wysyp na stolnicę, dodaj zimne masło i połącz składniki. Dodaj jajko, sól i śmietanę. Szybko wyrób ciasto. Wyłóż na formę  i włóż do lodówki na 40-50 minut. Piecz w nagrzanym piekarniku do 190 stopni z termoobiegiem  przez 12 - 15 minut. 


Nadzienie:
2 cukinie
1 duży bakłażan
2 marchewki
250 ml gęstej kwaśnej śmietany
3 jajka
1 i ½ łyżeczki granulowanego czosnku
½ łyżeczki startej gałki muszkatołowej
200 g startego sera mozzarella
sól, pieprz
oliwa
 

Bakłażan, cukinię i marchewkę pokrój wzdłuż na cienkie plasterki - jeśli będą szerokie przekrój na pół (najlepiej to zrobić obieraczką do warzyw wtedy paseczki wyjdą jednakowej grubości). Podsmaż warzywa na patelni grillowej po 1 - 2 minuty z każdej strony. Do kubka wlej śmietanę dodaj jajko i rozbełtaj widelcem. Wsyp mozzarellę i wymieszaj składniki. Dodaj gałkę muszkatołową, czosnek, sól i pieprz. Układaj paseczki warzyw obok siebie. Mieszankę wylej na tartę pomiędzy warzywa, najlepiej łyżką. Całość posmaruj oliwą i piecz w nagrzanym piekarniku do 170 stopni z termoobiegiem przez 35 - 40 minut. 

Dough base:
120 g butter
1 glassfull (200 g) gluten free wheat starch or corn starch
1/2 glassfull (100 g) of rice flour
1 egg
50 g (2
heaped tablespoons) of thick sour cream
½ teaspoon salt

Cut cold butter into small squares. Spill flour on pastry board, add the cold butter and combine the ingredients. Add egg, salt and sour cream, knead the dough. Lay off the dough on baking tray and put into the fridge for 40-50 minutes. Bake in a preheated oven to 190 degrees with air flow for 12 - 15 minutes.

Filling:
2 zucchini
1 large eggplant
2 carrots
250 ml thick sour cream
3 eggs
1 and ½ teaspoon granulated garlic  

½ teaspoon grated nutmeg
200 g grated mozzarella cheese
salt and pepper
olive oil

Cut eggplant, zucchini and carrots into thin slices.
Fry the vegetables on the grill pan 1 - 2 minutes on each side. Pour the cream into a cup and add the egg lightly beaten with a fork. Add mozzarella and mix ingredients. Season with nutmeg, garlic, salt and pepper. Place the vegetables next to each other. Pour egg cream mass between vegetables, best using a spoon. Bake the quiche in preheated oven to 170 degrees for 30 - 35 minutes with air flow.

Na patelni rozgrzej oliwę, dodaj rozgnieciony czosnek, podsmaż czosnek. Dodaj jarmuż i cukinię, duś na ogniu przez około 5 - 8 minut. Odstaw by przestudzić. Jajka, śmietanę i jogurt wymieszaj na jednolitą masę, dopraw solą i pieprzem. Przestudzoną cukinię i jarmuż połącz z połową masy jajecznej. Wylej masę jajeczno - warzywną na upieczone ciasto. Zalej pozostałą połową masy jajecznej, ułóż na niej ser  kozi i zielone cebulki (cebulki całe nie pokrojone), lekko wciśnij cebulki w masę jajeczną.  Posyp papryką w proszku. Piecz quiche przez 30 minut w temperaturze 170 stopni Celcjusza z termoobiegiem.

knead the dough. Lay off the dough into the baking tray and bake in preheated oven to 180 degrees Celsius for 15 minutes.

filling:
120 g kale
1 small zucchini, grated on the large mesh
150 g goat cheese
5 green onions
2 - 3 cloves of garlic
5 eggs
3 tablespoons thick sour cream
2 tablespoons plain yogurt
salt and pepper
hot paprika powder
3 tablespoons olive oil

In a skillet heat the oil, add the crushed garlic, fry garlic. Add kale and zucchini, simmer on low heat for about 5 - 8 minutes. Set aside to cool. Mix eggs, cream and yogurt into a homogeneous mass, season with salt and pepper. Connect cooled zucchini and kale with half of the egg mass. Pour the egg vegetable stuffing on the dough base. Pour the second part of the egg mass, top the goat cheese and green onions, press
lightly onions in the egg mass. Sprinkle with paprika powder. Bake the quiche for 30 minutes at 170 degrees Celsius with air flow.
