Wybrane dressingi do sałatek i sosy. Selected salad dressings and sauces.


Przygotowanie własnego dressingu do sałatki to naprawdę łatwe i szybkie zadanie.  Do przygotowania dressingu wykorzystuje mały słoik po konfiturze. Wszystkie składniki umieszczam w słoiczku, zakręcam nakrętkę i wytrząsam około 2 minut. Gotowe.
Używam olej z pierwszego tłoczenia. Większość przepisów opracowałam osobiście bazując na informacjach znalezionych w internecie. Dressing francuski, winegar, dressing z makiem, sos holenderski, sos tzatziki z miętą i koprem, dressing z maślanką i kolendrą - są autorstwa innych blogerów, których blogi subskrybuje.

Francuski dressing (scroll down to the English version)

2 małe zielone cebulki pokrojone w małe plasterki

Kiełki zmiksuj z jogurtem za pomocą  blendera. Dodaj kwaśną śmietanę, sok z cytryny, czosnek, cukier; wymieszaj dokładnie łyżką. Dopraw pieprzem.

Sos Alfredo z kalafiorem
2 łyżki masła
1 ząbek czosnku
80 - 100 ml śmietany 30%

3 łyżki sera tartego parmezan lub mieszanka serów twardych (np. zarpellon formaggio mix)
1 łyżeczka bulionu warzywnego bezglutenowego w proszku
240 g mrożonego kalafiora (1/2 główki kalafiora)
1 łyżeczka suszonej natki pietruszki
sól i pieprz


Kalafior ugotuj w wodzie z szczyptą soli, 7 minut i odcedź. Zimny kalafior ugnieć widelcem na puree. Na patelni rozpuść masło, dodaj czosnek i lekko podsmaż. Dodaj bulion rozpuszczony w wodzie, puree kalafiorowe oraz natkę pietruszki; wymieszaj i gotuj około 3 minut. Dodaj ser i śmietanę, wymieszaj i zagotuj na małym ogniu. Dopraw solą i pieprzem.

Sos holenderski
4 żółtka (użyłam 2 żółtka i 2 jajka)
sok z połowy cytryny
100 g masła
sól, pieprz i papryka do smaku

Jajka i żółtka ubij z sokiem z cytryny na puszysta pianę. Rozpuść masło, gorące wlej powoli ciągłym strumieniem do ubitych białek. W trakcie dodawania masła ciągle mieszaj jajka. Podgrzej na małym ogniu, by sos zrobił się gęsty. Jeżeli sos wyjdzie zbyt gęsty dodaj trochę gorącej wody i wymieszaj. Dopraw solą, pieprzem i papryką.   


Sos tzatziki z miętą i koprem
200 g jogurtu greckiego
2 średnie ogórki gruntowe
2 ząbki czosnku
sok z połowy cytryny
1/3 łyżeczki skórki otartej z cytryny
kilka gałązek koperku
garść liści świeżej mięty, opcjonalnie
do smaku - sól
pieprz mielony
1/2 - 1 łyżeczka cukru

Ogórki umyj i zetrzyj bez obierania na dużych oczkach tarki jarzynowej. Posól trochę i przełóż  na plastikowe sitko, odstaw na ok. 30 minut. Czosnek obierz i bardzo drobno posiekaj - ma być właściwie pastą czosnkową. Posiekaj też zieleninę. Czosnek, zieleninę i sok cytrynowy dodaj do bardzo gęstego dobrego jogurtu. Dodaj także odciśnięte z soku ogórki, wymieszaj. Dopraw do smaku szczyptą cukru i pieprzem.



Sos tzatziki z miętą i buraczkami
300 g jogurtu greckiego
1 średniej wielkości ogórek (200 g)
150 g ugotowanych lub upieczonych buraków
2 małe ząbki czosnku, przeciśnięty przez praskę
sok z połowy cytryny
kilka gałązek koperku
garść liści świeżej mięty
sól
pieprz mielony
½ łyżeczka cukru

Buraki zetrzyj na tarce na dużych oczkach. Ogórki umyj i zetrzyj bez obierania na dużych oczkach. Posól ogórki i odstaw na około 30 minut. Posiekaj zieleninę. Czosnek, zieleninę i sok cytrynowy dodaj do bardzo gęstego dobrego jogurtu. Dodaj także ogórki, buraki i wymieszaj. Dopraw do smaku szczyptą cukru i pieprzem. 


Sos chimichurri 
(zielony sos z posiekanej natki pietruszki i oregano, czosnku, oliwy i octu winnego, pochodzi z Argentyny, w Ameryce łacińskiej dodaje się również kolendrę)
10 gałązek świeżej natki pietruszki (pół pęczka)
12 gałązek świeżej kolendry
7 gałązek świeżego oregano, możesz zastąpić świeżym majerankiem
2 duże ząbki czosnku
8 łyżek oliwy
1 + 1/2 łyżki czerwonego octu winnego
1 łyżka soku z cytryny
1/4 łyżeczki płatków papryki
sól, pieprz do smaku


W blenderze zmiksuj natkę pietruszki, oregano, kolendrę i czosnek. Dodaj oliwę, ocet winny i sok z cytryny, ponownie zmiksuj. Dopraw solą, pieprzem i płatkami papryki. 

Preparing your own salad dressing is really easy. To prepare the dressing, use a small jar. Put all ingredients in a jar, screw the cap and shaken about 2 minutes. Done.
I use extra virgin oil.

French dressing 

1 tablespoon of vinegar
1 teaspoon of gluten-free Dijon mustard
1 teaspoon of honey
1 teaspoon of chopped chives 
1/2 bunch of parsley, chopped 
pinch of dried dill 
pinch of dried basil 
pinch of dried oregano 
pinch of dried tarragon 
pinch of granulated garlic 
salt and freshly ground pepper 
3 tablespoons of oil 

Greek dressing 
3 tablespoons of oil 
1 tablespoon of lemon juice 
3 tablespoons of water
1 teaspoon of honey 
1/2 teaspoon of granulated garlic or 1 clove of garlic 
1/2 teaspoon of sweet paprika
1 teaspoon of marjoram 
pinch of Provence herbs 
salt and freshly ground pepper

Vinaigrette 

3 tablespoons of oil 
1 tablespoon of honey
1 tablespoon of vinegar
1/2 teaspoon of granulated garlic or 1 clove of garlic 
salt, freshly ground pepper

Garlic Dressing 

250 ml of sour cream
1 teaspoon of gluten-free bouillon powder 
4 tablespoons ofgluten-free mayonnaise
4 tablespoons of gluten-free ketchup
2 - 3 cloves of garlic, pressed 

Mustard Dressing 
2 tablespoons of Greek yogurt 
3 tablespoons of oil
2 tablespoons of lemon juice 
3/4 tablespoons of gluten-free mustard 
3/4 teaspoon of honey 
1 clove of garlic, pressed 
freshly ground pepper to taste

Ginger dressing 
3/4 tablespoon of grated fresh ginger
2 tablespoons of extra virgin oil 
2 tablespoons of lemon juice 
1 tablespoon of honey
pinch of cayenne pepper

Chilli dressing 

4 + 1/2 tablespoons of oil
1 + 1/2 tablespoons of honey 
2 + 1/2 tablespoons of red wine vinegar
1/2 teaspoon of granulated garlic 
1/2 teaspoon of chilli flakes 
1 teaspoon of Tuscan herbs
pinch of salt

Dressing with poppy seed (for fruit salad)

4 tablespoons of gluten-free mayonnaise
4 tablespoons of Greek yogurt 
3 tablespoons of sugar cane
2 - 3 teaspoons of vinegar
3 teaspoons of poppy seeds

Avocado Dressing 

1/2 avocado 
60 ml of water 
juice of 1 lime 
1/3 - 1/2 teaspoon of cumin, 
1/3 - 1/2 teaspoon of chilli powder
2 sprigs of cilantro or parsley, finely chopped 
salt and pepper to taste

Blend all ingredients in a blender and season with salt and pepper.

Dressing with avocado and celery

1 avocado 
2 large stalks of celery
4 tablespoons of Greek yogurt 
1 tablespoon of gluten-free mayonnaise 
salt and freshly ground pepper

Blend a
vocado, celery, mayonnaise and yogurt with a hand blender to a smooth sauce. Season with salt and pepper.


Dressing with grapefruit juice 

2 tablespoons of olive oil 
1 tablespoon of vinegar or lemon juice 
juice of 1/2 grapefruit 
1 teaspoon of sugar
1 small clove garlic, pressed

Tahini dressing 
2 tablespoons of tahini, natural 
3 - 4 tablespoons of lemon juice 
3 tablespoons of Greek yogurt 
2 teaspoons of grated fresh ginger 
1 teaspoon of honey 
1 small clove of garlic, pressed 
freshly ground pepper

Asian dressing 

1 teaspoon of grated fesh ginger 
1 teaspoon of rice vinegar or  2 tablespoons of lemon juice 
1 tablespoon of honey or agave syrup 
2 teaspoons of oil 
1 teaspoon of gluten-free soy sauce

Dressing with buttermilk and coriander 

1/4 glassful of Greek yogurt 
2 tablespoons of gluten-free mayonnaise 
2 tablespoons of buttermilk 
juice of  1/2 lime 
1 - 2 small cloves of garlic, pressed 
2 small green onions, cut into small slices 
1/4 glassful of coriander leaves or parsley, chopped 
1/4 teaspoon of salt 
1/4 teaspoon of pepper

Dressing with sprouts 

6 tablespoons of Greek yogurt 
4 tablespoons of sour cream 18% 
25 - 30 g of a mixture of sprout (alfalfa, radish, lentils) 
juice of ½ lemon 
1 clove of garlic, pressed
1 + 1/2 teaspoon of sugar 
pepper to taste

Blend s
prouts with yogurt using a blender. Add the sour cream, lemon juice, garlic, sugar; mix well. Season with pepper.


Homemade Caesar Dressing with mustard (3 - 4 servings)
3 tablespoons of olive oil
2 tablespoons of plain yogurt
1 tablespoon of mayonnaise gluten-free or yolk
1 teaspoon of mustard
gluten-free
2 tablespoons of lemon juice
1 teaspoon of sugar
2 cloves garlic, crushed
3
teaspoons of grated mix hard cheese or grated parmesan  
2/3 teaspoon of Worcestershire sauce
1/2 teaspoon of dried parsley
freshly ground pepper


Homemade Caesar Dressing with horseradish (3 - 4 servings)
3 tablespoons of olive oil
2 tablespoons of plain yogurt
1 tablespoon of mayonnaise gluten-free or yolk
1 + 1/2 teaspoons of
horseradish with cranberries
2 tablespoons of lemon juice
1 teaspoon of sugar
1 clove garlic, pressed
3
teaspoons of grated mix hard cheese or grated parmesan  
2/3 teaspoon of Worcestershire sauce
1/2 teaspoon of dried parsley
freshly ground pepper
 


Alfredo cauliflower sauce  
2 tablespoons of butter   
1 clove of garlic  
80 - 100 ml of cream 30%  
100 ml of hot water  
3 tablespoons of grated Parmesan cheese  
1 teaspoon of gluten-free vegetable broth powder  
240 g of frozen cauliflower (1/2 head of cauliflower)   
1 teaspoon of dried parsley  
salt and pepper 

Cook cauliflower in water with a pinch of salt, 7 minutes and drain. Mash cold cauliflower with a fork to puree. Melt the butter in a frying pan, add the garlic and fry lightly. Add broth dissolved in water, mashed cauliflower and dried parsley; stir and cook about 3 minutes. Add cheese and cream, mix well and bring to boil over low heat. Season with salt and pepper.

Hollandaise sauce
4 egg yolks (I used 2 egg yolks and 2 eggs)
juice of half a lemon 
100 g of butter 
salt, pepper and paprika to taste

Whisk the eggs and egg yolks with lemon juice on the fluffy foam. Melt butter, pour slowly hot butter in the eggs stirring constantly the beaten eggs. Heat sauce over low heat until the one has thickened. If the sauce is too thick, add a little hot water and stir. Season with salt, pepper and paprika. 

 
Tzatziki sauce with mint and dill
200 g of Greek yoghurt
2 medium cucumbers ground
2 cloves of garlic
juice of half a lemon
1/3 teaspoon of lemon zest
a few sprigs of dill
a handful of fresh mint leaves, optional
salt
ground pepper
1/2 - 1 teaspoon of sugar

Wash cucumbers and grate without peeling using large mesh. Add salt, let stand for 30 minutes. Peel the garlic and finely chop. Chop the greens too. Add garlic, greens and lemon juice to a very thick yogurt. Add also the cucumber without juice and mix. Season to taste with a pinch of sugar and pepper.


Tzatziki sauce with mint and beets. 
300 g of Greek yoghurt
1 medium cucumber (200 g)
150 g of cooked or baked beets
2 small cloves of garlic, pressed
juice of half a lemon
a few sprigs of dill
a handful of fresh mint leaves
salt
ground pepper
1/2 teaspoon of sugar

Grate beets using a large mesh. Wash cucumbers and grate in large mesh. Sprinkle cucumbers with salt and let stand for about 30 minutes. Chop the greens. Add garlic, greens and lemon juice to yoghurt. Add cucumbers and beets, mix well. Season to taste with a pinch of sugar and pepper.



Chimichurri sauce
(green sauce with chopped parsley and oregano, garlic, olive oil and vinegar, it comes from Argentina, in Latin America they also have added cilantro)
10 sprigs fresh parsley (half a bunch)
12 sprigs fresh cilantro
7 sprigs of fresh oregano, you can substitute for fresh marjoram
2 large cloves of garlic
8 tablespoons olive oil
1 + 1/2 tablespoons red wine vinegar
1 tablespoon lemon juice
1/4 teaspoon pepper flakes
salt and pepper to taste


In a blender, blend parsley, oregano, coriander and garlic. Add the olive oil, vinegar and lemon juice, blend again. Season with salt, pepper and pepper flakes

  

Bezglutenowe ciasto pomarańczowe z kremem. Gluten-free orange cake with custard.


Ciasto (scroll downt to the English version)
150 g masła
160 g cukru  
3 jajka  
1 opakowanie cukru z wanilią i kardamonem, kamis (około 2 łyżki)  
1 łyżeczka olejku pomarańczowego  
3 duże pomarańcze  
230 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
80 g mąki ryżowej*
40 g skrobi ziemniaczanej*  
3/4 łyżki bezglutenowego proszku do pieczenia*

kolorowa posypka do dekoracji
*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).     


Krem
250 g sera mascarpone

250 g śmietany kremówki minimum 30%

6 łyżek dobrej jakości konfitury z owoców leśnych

1 + 1/2 łyżka żelatyny

3 - 4 łyżki wody



Pomarańcze sparz gorącą wodą. Zetrzyj skórkę i wyciśnij sok z pomarańcz. Mąkę przesiej. Masło o temperaturze pokojowej utrzyj z cukrem, dodawaj po jajku i miksuj dalej na średniej prędkości obrotach. Dodaj sok i skórkę z pomarańczy, wymieszaj (będzie wyglądało jak zsiadłe mleko). Dodaj mąkę i delikatnie wymieszaj szpatułką. Przełóż ciasto na blachę do pieczenia. Piecz ciasto w nagrzanym piekarniku do 180 stopni Celsjusza z termoobiegiem przez 25 minut. Po 12 minutach zmniejsz temperaturę do 170 stopni. Zostaw do ostygnięcia.
Krem: Mascarpone wymieszaj z konfiturą. Ubij na sztywno śmietanę, dodaj do masy serowo owocowej, ponownie wymieszaj. Żelatynę rozpuść w wodzie, podgrzej na małym ogniu, aż żelatyna się rozpuści; ciągle mieszaj. Dodaj letnią żelatynę do kremu i dokładnie wymieszaj. Przełóż krem na upieczone, chłodne ciasto. Delikatnie posyp ciasto kolorową posypką. Wstaw ciasto do lodówki.

Dough
150 g of butter
160 g of sugar
3 eggs
1 package of vanilla sugar with cardamom, Kamis company (about 2 tablespoons)
1 teaspoon of orange aroma
3 large oranges
230 g of gluten-free wheat starch or corn starch*
80 g of rice flour*
40 g of potato starch *
3/4 tablespoons of gluten-free baking powder *

sprinkles to decorate
 * I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).

Custard
250 g of mascarpone cheese
250 g of heavy cream at least 30%
6 tablespoons of good quality berries jam
1 + 1/2  tablespoons of gelatin
3 - 4 tablespoons of water  

Scald (blanch) oranges with hot water. Grate orange skin (zest) and squeeze the juice. Sieve the flour. Blend butter (room temperature) with sugar, add the eggs and mix on medium speed. Add juice and orange zest, stir - dough will look like curd. Add the flour and stir gently with a spatula. Transfer the dough to a baking sheet metal. Bake the cake in the preheated oven to 180 degrees Celsius with air flow for 25 minutes. After 12 minutes, reduce the temperature to 170 degrees. Leave the cake to cool.
Custard: Mix mascarpone with jam. Whip the cream to stiff, add it to cheese fruit mass and mix again. Dissolve gelatin in water, heat it over low heat until gelatin is melted, stirring constantly. Add lukewarm melted gelatin to custard and mix thoroughly. Put the cream on the baked, cool cake. Sprinkle the cake with sprinkles. Put one in the fridge.
