Galat z kurczakiem i warzywami. Jelly with chicken and vegetables.


12 sztuk
10 - 12 jajek przepiórczych
160 g mrożonej małej marchewki
160 g mrożonego groszku
 

3 świeże marchwie
2 świeże pietruszki
pół świeżego selera
2 nogi świni (ewentualnie 1 golonka)
6 skrzydełek kurczaka
2 uda z kurczaka
5 liści laurowych
10 - 12 ziaren ziela angielskiego
1 łyżka bezglutenowego bulionu w proszku Swiss Vegetable Bouillon Powder
3 łyżki żelatyny

Jajka przepiórcze ugotować w osolonej wodzie około 3 minut. Mrożoną marchewkę ugotować w osolonej wodzie 10 minut, odcedzić. Mrożony groszek ugotować w osolonej wodzie 9 minut, odcedzić. Mięso zalać wodą i moczyć około godziny. Zlać wodę. Świeże warzywa obrać i pokroić na duże kawałki. Mięso umieścić w dużym garnku, dodać świeże warzywa, ziele angielskie i liście laurowe, zalać 2 litrami wody, gotować w otwartym garnku bez przykrycia tak długo aż mięso będzie odchodzić od kości, około półtorej lub dwie godziny. Duża ilość wody wyparuje. Wyjąć mięso kurczaka z wywaru. Do wywaru dodać łyżkę bulionu w proszku. Jeżeli wywaru jest mało to dolej wody by wywaru było około półtorej litra. Wywar gotować z nóżkami świni jeszcze około pół godziny.  Mięso wyjąć z wywaru, wywar przecedzić. Żelatynę rozpuścić w 150 ml gorącej wody, jeżeli żelatyna się nie rozpuści to podgrzej ją na małym ogniu w rondelku aż do momentu gdy się rozpuści. Rozpuszczoną żelatynę połączyć z wywarem. Mięso kurczaka oddzielić od kości, usunąć skórę i podzielić na małe cząstki. W foremkach (mogą być małe kokilki) umieścić po jednym jajku przepiórczym, trochę marchewki, groszku a na to mięso kurczaka, zalać wywarem. Zostawić do ostygnięcia, foremki z galatem umieścić na noc w lodówce. Przed podaniem foremkę umieścić na pól minuty w gorącej wodzie by łatwo wyjąc galat z formy. Podawać skropione sokiem z cytryny lub octem.


10 - 12 quail eggs
160 g frozen small carrots
160 g of frozen peas
 

3 fresh carrots
2 fresh parsley
half of fresh celery
2 legs of the pig
6 chicken wings
2 chicken thighs
5 bay leaves
10 - 12 grains of allspice
1 tablespoon of gluten-free bouillon powder, Swiss Vegetable Bouillon Powder of Marigold company 
3 tablespoons of gelatin

Cook quail eggs in water for about 3 minutes. Cook frozen carrots in water with two pinches of salt 10 minutes, then drain them. Cook frozen peas in salted water 9 minutes, drain. Pouring meat over water and soak for about an hour.
Pouring off the water. Peel fresh vegetables, cut into large pieces. Put the meat in a large pan, add fresh vegetables, allspice and bay leaves, pour 2 liters of water, boil all in a pot uncovered until the meat will come away from the bones, about one and a half or two hours. A large amount of water evaporated. Remove the chicken from the broth. Add a tablespoon of bouillon powder to the broth. If you have less than one and a half liters of broth, add water to this volume. Boil broth with legs of the pig about half an hour more. Remove meat from broth, strain the broth. Dissolve gelatin in 150 ml of hot water, if the gelatin is not dissolved heat it in a saucepan until it dissolve (over low heat). Combine dissolved gelatin with the broth. Separate chicken meat from the bones, remove skin and divided the meat into small particles. Put one quail egg, some carrots, peas and shredded chicken in the small molds, pour the broth. Leave to cool, put the mold with jelly in the fridge overnight. Before serving, place the mold on a half minutes in hot water to easily remove the jelly. Serve them drizzled with lemon juice or vinegar.
