Tort - naleśniki marchewkowe z kremem serowo - ananasowym. Layered Cake - carrot crêpe (pancakes) with cheese pineapple cream.



Ciasto, 7 - 8 naleśników
4 duże jajka
3 duże marchewki
200 g skrobi kukurydzianej*
120 g bezglutenowej skrobi pszennej*
60 g cukru
4 łyżki masła (80 g)
400 ml mleka kokosowego (82%)
szczypta soli
oliwa do smażenia

Krem
450 g ananasa z puszki
150 g soku ananasowego z puszki
1 czubata łyżka cukru
400 g naturalnego serka homogenizowanego lub ricotta
3 - 4 łyżki skrobi kukurydzianej

4 plastry ananasa (110 g), pokrojony w kostkę, do dekoracji
*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).   

Ugotuj marchewkę w wodzie z szczyptą soli około 30 minut. Odcedź.
Ananasa z puszki zmiksuj w blenderze na małe kawałki, połącz z sokiem ananasowym, cukrem, serkiem homogenizowanym i skrobią kukurydzianą, dokładnie wymieszaj. Podgrzej krem na patelni na średnim ogniu około 4 minut, ciągle mieszając by krem się nie przypalił. Odstaw do ostygnięcia.
Ugotowaną marchewkę zmiksuj na puree. Jajka wymieszaj z mlekiem kokosowym i cukrem, dodaj sól, marchewkowe puree i mąkę, wymieszaj. Dodaj roztopione, chłodne masło, ponownie wymieszaj.
Smaż cienkie naleśniki na patelni wysmarowanej oliwą przy pomocy pędzelka, unikniesz nadmiaru oliwy na patelni. Smażę naleśniki na dwóch patelniach. Podpiekam naleśnik z jednej strony, przykrywam drugą patelnią, obracam do góry nogami i piekę z drugiej strony na drugiej patelni. Druga patelnia też jest wysmarowana oliwą. Dzięki temu zabiegowi naleśniki nie rozrywają się.
Naleśniki układam jeden na drugim, posmarowany każdy kremem serowo- ananasowym. Tort naleśnikowy dekoruję kawałkami ananasa.
Smaczny zarówno zimny jaki i na ciepło.

Dough, 7 - 8 crêpe
4 large eggs
3 large carrots 
200 g of corn starch* 
120 g of gluten-free wheat starch*
60 g of sugar 
4 tablespoons of butter (80 g) 
400 ml of coconut milk (82%) 
pinch of salt
oil for frying 

Cream 
450 g of canned pineapple 
150 g of canned pineapple juice 
1 heaping tablespoon of sugar 
400 g of natural homogenized cheese or ricotta
3 - 4 tablespoons of cornstarch 

4 slices of canned pineapple (110 g), diced, to decorate
* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products). 

Cook carrots in water with a pinch of salt about 30 minutes. Drain. 
Blend canned pineapple in a blender into small pieces, combine one with the pineapple juice, sugar, cheese and cornstarch, mix thoroughly. Heat the cream in a pan over medium heat about 4 minutes, stirring constantly to not burn the cream. Set aside to cool. 
Blend cooked carrot to get puree. Mix eggs with coconut milk and sugar, add the salt, carrot puree and flour, mix. Add melted, cold butter, stir again. Fry thin crêpe in a pan greased (smeared) with olive oil using a brush, you avoid excess of oil in the pan. 
Fry the crêpe using two pans. I fry a crêpe on the one hand, I cover it the other pan, turn upside down and bake on the other hand, on the other pan. The second pan is also smeared with oil. We prevent the disruption of crêpe.
Put the crêpe one-on-one, spread with cheese pineapple cream. Decorate the crêpe cake wth the pieces of pineapple.
It is delicious both cold and warm.
