Ciasto cytrynowe. Lemon cake.

200 g bezglutenowej skrobi kukrydzianej lub bezglutenowej skrobi pszennej*
160 g bezglutenowej mąki gryczanej*
1 łyżeczka bezglutenowego proszku do pieczenia*
1 łyżeczka sody
1/2 łyżeczki soli
190 ml maślanki
3 łyżki startej skórki z cytryny (skórka z 2 dużych cytryn) 
1 łyżeczka ekstraktu waniliowego
sok z 3 dużych cytryn
300 g cukru
170 g miękkiego masła, bez laktozy
3 jajka

polewa
320 g cukru pudru
sok z 1 dużej cytryny (około 4 1/2 łyżek)
1 łyżka wody, opcjonalnie

cytryna do dekoracji
blacha do pieczenia 25 x 36 cm

Cytryny sparz gorącą wodą. Z dwóch cytryn zetrzyj skórkę. W misce wymieszaj mąkę, proszek do pieczenia, sodę i sól. Odstaw.
Połącz maślankę z sokiem z cytryny i ekstraktem waniliowym, wymieszaj. Odstaw.
Wymieszaj cukier z startą skórką z cytryny. Do cukru dodaj masło i ucieraj aż masa będzie lekka i puszysta. Dodaj jajka i ubijaj aż będzie gładka masa. Na małych obrotach dodaj mąkę w 3 porcjach na przemian z mieszaniną maślanki w 2 porcjach. Ubijaj aż masa będzie gładka i puszysta.
Przełóż ciasto na blachę wysmarowaną masłem i posypaną mąką. Piecz w 160 - 165 stopniach Celsjusza z termoobiegiem przez 25 - 30 minut,aż będzie złoto-brązowe. Odstaw do ostygnięcia na 15 minut.
Polewa: Cukier puder wymieszaj z sokiem z cytryny aż będzie gładki. Rozprowadź polewę na ciepłym cieście. Udekoruj kawałkami cytryny.

200 g of gluten-free corn starch or gluten-free wheat starch*
160 g of gluten-free buckwheat flour*
1 teaspoon of gluten-free baking powder*
1 teaspoon of soda
1/2 teaspoon of salt
190 ml buttermilk
3 tablespoons of grated zest (2 large lemons)
1 teaspoon of vanilla extract
juice of 3 large lemons
300 g of sugar
170 grams of soft butter, without lactose

3 eggs
 

glaze
320 g of icing sugar
juice of 1 large lemon (about 4 1/2 tablespoons)

1 tablespoon water, optionally

lemon for decoration

baking mold size: 25 x 36 cm
* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products). 

Lemon brew with hot water. Grate zest. In bowl mix flour, baking powder, soda and salt. Set aside.
Combine buttermilk with lemon juice and vanilla extract, stir. Set aside. 

With a stand mixer, beat sugar with grated zest. Add the butter and beat until light and fluffy. Add the eggs and beat until the mass is smooth. On low speed, add flour mixture in 3 additions, alternating with 2 additions of the buttermilk mixture. Beat until smooth.
Pour dough into a greased butter and floured baking mold and smooth the top with a spatula. Bake at 160 - 165 Celsius degree with air flow, for 25 - 30 minutes, or until golden brown. Transfer to wire rack and let cool 15 minutes.
Glaze: Mix sugar with lemon juice until smooth. Gently spread the glaze over warm cake. Decorate with pieces of lemon.
