Piernikowe serniki z gruszką i żurawiną (bez pieczenia, bezglutenowe). Gingerbread cheesecake with pear and cranberry (no bake, gluten-free).

90 g herbatników bezglutenowe Fantazja Piernikowa *
2 łyżki rozpuszczonego masła

300 g sera ricotta
4 łyżki cukru
2 + 1/2 łyżki soku z cytryny
120 g śmietany

3 gruszki
100 g świeżej żurawiny
1/2 - 3/4 łyżeczki startego imbiru
skórka z 1/2 cytryny
3 łyżki cukru
1 łyżka masła

*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).  

Gruszki obierz, pokrój na kawałki. Na patelni rozpuść masło, dodaj gruszki, żurawinę, imbir, skórkę z cytryny i cukier. Gotuj aż cukier się skarmelizuje, około 5 minut. Odstaw by ostygło.
Herbatniki pokrusz bardzo drobno, dodaj rozpuszczone masło i dokładnie wymieszaj. Przełóż do słoiczków.
Ser ricotta wymieszaj z cukrem i sokiem z cytryny. Ubij śmietanę, dodaj do sera i ponownie wymieszaj. Masę serowo śmietanową przełóż do słoików, na to nałóż owoce. Podawaj schłodzone.

90 g Fantasy Gingerbread biscuits of Glutenex*, gluten-free
2 tablespoons melted butter
 

300 g ricotta
4 tablespoons of sugar
2 + 1/2 tablespoons lemon juice
120 g cream

3 pears
100 g fresh cranberries
1/2 - 3/4 teaspoon grated ginger
zest of 1/2 lemon
3 tablespoons sugar
1 tablespoon butter


* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products). 

Peel pears, cut into pieces. Melt the butter in a frying pan, add the pears, cranberries, ginger, lemon zest and sugar. Cook until the sugar is caramelised, about 5 minutes. Set aside to cool down.
Crush (break) biscuits very finely, add the melted butter and mix thoroughly. Transfer to jars.
Mix ricotta cheese with sugar and lemon juice. Whip the cream, add the cheese and stir again. Put the mass of the cream and cheese into jars, on top place fruit. Serve chilled.
