Ciasto marchewkowe z czarną porzeczką. Carrot cake with blackcurrant.


4 jajka
310 g cukru trzcinowego
150 ml oleju
250 ml śmietany 18%
400 g startej na dużych oczkach marchewki
50 g orzechów włoskich, posiekane
150 g ananasa z puszki, pokrojony w kawałki
150 g czarnej porzeczki
70 g skrobi ziemniaczanej*
50 g mąki gryczanej*
220 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
80 g mąki ryżowej*
1 łyżeczka sody
1 łyżeczka bezglutenowego proszku do pieczenia*
1 łyżeczka cynamonu
1/2 łyżeczki soli

*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY). 

Mąkę przesiej przez sito. Jajka utrzyj z cukrem, dodaj mąkę, proszek bezglutenowy, sodę, sól i śmietanę, dokładnie wymieszaj. Dodaj do masy olej i marchewkę, ponownie wymieszaj. Na koniec dodaj orzechy, ananasa i porzeczkę, delikatnie wymieszaj. Przełóż ciasto do keksówki. Piecz ciasto w nagrzanym piekarniku do 180 stopni Celsjusza z termoobiegiem przez 45 - 50 minut. Po 15 minutach pieczenia zmniejsz temperaturę do 170 stopni. Pod koniec pieczenia, jeżeli to konieczne, zmniejsz temperaturę do 150 stopni Celsjusza.

310 g of cane sugar
150 ml of oil
250 ml of cream, 18%
400 g of grated carrots using large mesh
50 g of walnuts, chopped 
150 g of canned pineapple, cut into pieces 
150 g of blackcurrant
70 g of potato starch*
50 g of buckwheat flour*
220 g of gluten-free wheat starch or corn starch* 
80 g of rice flour * 
1 teaspoon of baking soda
1 teaspoon of gluten-free baking powder*
1 teaspoon of cinnamon 
1/2 teaspoon of salt

Sieve flour. Mash eggs with the sugar, add the flour, gluten-free baking powder, baking soda, salt and cream, mix thoroughly. To mass add oil and carrot, mixed again. Finally, add nuts, pineapple and currant, gently stir. Put a dough into a bakingmold. Bake cake in preheated oven to 180 degrees Celsius with air flow for 45 - 50 minutes. After 15 minutes of baking, reduce a temperature to 170 degrees. At the end of cooking, if necessary, reduce the temperature to 150 degrees Celsius.
