Bezglutenowe ciasto z budyniem, malinami i owocami lasu. Gluten-free cake with pudding, raspberries and forest fruits (berries).




To ciasto możesz upiec na Walentynki. (scroll down to the English version)

na formę 20 cm x 27 cm
Ciasto  kruche:
240 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
70 g mąki ryżowej
*

50 g mąki ziemniaczanej
190 g cukru trzcinowego
1 łyżka proszku do pieczenia bezglutenowego*
200 g zimnego masła
1 jajko

4 łyżki gęstej śmietany 18%

Masa budyniowa:
2 budynie waniliowe bezglutenowe* (1 opakowanie na 500 ml mleka i 2 łyżki cukru)
800 ml mleka
2 łyżki cukru


Warstwa  owocowa
450 g mrożonych malin

350 g mrożonych owoców leśnych (jagody, żurawina, jeżyna)
250 g konfitury malinowej

Jeżeli lubisz słodkie ciasta do warstwy owocowej dodaj 4 -5 łyżek cukru.

1 jajko
2 – 3 łyżki migdałów w płatkach

*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY). 

Rozmróź owoce. Odlej sok. Dodaj konfiturę malinowa i delikatnie wymieszaj,ponownie odlej sok.
Budyń ugotuj w mniejszej ilości mleka niż na opakowaniu, chcemy by był gęsty. 650 ml mleka i 2 łyżki cukru podgrzej na średnim ogniu. Budyń rozrób w 150 ml zimnego mleka. Do gotującego się mleka wlej rozrobiony budyń i gotuj mieszając aż zgęstnieje, około 2 minut. Odstaw ugotowany budyń do ostygnięcia.
Ciasto. Zimne masło posiekaj nożem, dodaj mąkę, cukier, proszek do pieczenia, 1 jajko i śmietanę. Wyrób ciasto na gładką masę.
Wstaw ciasto do lodówki na około 30 minut. Wyłóż blachę papierem do pieczenia. Podziel schłodzone ciasto na dwie równe części. Jedną część ciasta wyłóż na spód formy do pieczenia. Włóż ciasto do lodówki na kolejne 15 minut.  Piekarnik nagrzej do 190 stopni, bez termoobiegu. Formę z ciastem wyjmij z lodówki, nakłuj widelcem ciasto, wstaw do piekarnika i podpiecz spód aż nabierze jasnego brązowego koloru, 15 minut.
Wyjmij ciasto z piekarnika, wlej na nie budyń. Rozprowadź równo za pomocą szpatułki. Na budyń wyłóż masę owocową. Z drugiej części ciasta odrywaj po małym kawałku ciasta i układaj na warstwie owoców aż pokryjesz całą blachę. Piecz ciasto około 35 minut w 180 stopniach Celsjusza, bez termoobiegu. 10 minut przed końcem pieczenia ciasto wyjmij z piekarnika, posmaruj roztrzepanym jajkiem i posyp cukrem i płatkami migdałów, wstaw z powrotem do piekarnika. 

Placek należy kroić, gdy ciasto jest już zimne, wtedy budyń jest sztywny i łatwo wyjmuje się ciasto z formy. Najlepiej przed podaniem trzymaj całą noc w lodówce.


This cake can be served on Valentine's Day. 

baking tray 20 x 27 cm

Shortcrust dough:
240 g of
gluten-free wheat starch or corn starch*
70 g of rice flour
*

50 g of potato starch
190 grams of cane sugar
1 tablespoon of gluten-free baking powder*
200 g of cold butter
1 egg
4 teblespoons of heavy cream 18%

Pudding mass:
2 gluten-free vanilla pudding of Celiko* (1 pack per 500 ml of milk and 2 tablespoons of sugar)
800 ml of milk
2 tablespoons of sugar


Fruit layer:
450g frozen raspberries
350 g of frozen berries (blueberries, cranberries, blackberry)
250 g raspberry jam

If you like very sweet cakes add 4 - 5 tablespoons of sugar to the fruit layer.

1 egg
2 - 3 tablespoons of flaked almonds 
* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).

Thaw fruit. Pour off the juice. Add the raspberry jam to fruits and gently stir, again pour off the juice. 
Boil pudding in less amount of milk than on the package. Heat 650 ml of milk and 2 tablespoons sugar over medium heat. Dissolve the pudding powder in 150 ml of cold milk. To boiling milk add a dissolved pudding powder and cook the pudding stirring about 2 minutes. Let stand to cool the pudding.
Dough. Chop cold butter with knife, add flour, sugar, baking powder, 1 egg and cream, knead douh until smooth. Put the dough in the fridge for about 30 minutes. Put baking paper on a cookie sheet. Divide the chilled dough into two equal parts. One part of the dough place on the bottom of the baking tray. Put the dough in fridge for 15 minute more. Preheat the oven to 190 degrees, without the air flow. Remove the baking tray with dough from the fridge. Puncture the dough with a fork and bake 15 minutes without the air flow. Remove the cake from the oven, place the cooked pudding on the baked dough. Then put fruit mass on the pudding. Divide the second part of dough on small pieces and put on whole fruit layer. Bake the cake for about 35 minutes at 180 degrees Celsius without the air fllow. 10 minutes before end of cooking remove the cake from the oven, smear the dough top with the beaten egg, sprinkle with the sugar and the almonds. Insert (put) back the cake into the oven. The cake should be cut when the dough is cold, the pudding is stiff (rigid) and the cake is removed easily from the baking tray. It's best to keep all night in the fridge before serving.
