Sernik cytrynowy z borówkami na zimno. No bake lemon cheesecake with blueberries.

Spód
180 g bezglutenowych herbatników
100 g masła bez laktozy

Masa serowa
250 g sera śmietankowego
350 g sera mascarpone
3 łyżki soku z cytryny
125 g cukru
300 g/ml śmietany kremówki 30% lub 36%, schłodzona
3 łyżeczki żelatyny + 4 łyżki zimnej wody

150 g borówek
1 galaretka owoce leśne lub jagodowa + 400 ml gorącej wody

forma o średnicy 21 cm

Spód: Herbatniki pokrusz w mikserze, dodaj roztopione masło i dokładnie wymieszaj. Przełóż do formy, równomiernie rozłóż na spodzie. Wstaw do lodówki na 15 minut.
Masa serowa: W małym garnuszku wymieszaj żelatynę z zimną wodą. Odstaw. W misce umieść ser śmietankowy, ser mascarpone, cukier i sok z cytryny. Ubij na średnich obrotach, aż uzyskasz gładką masę. W drugiej misce ubij na sztywno śmietanę kremówkę. Śmietanę dodaj do masy serowej i delikatnie wymieszaj. Podgrzej delikatnie żelatynę, aż się rozpuści, nie gotuj. Dodaj do masy serowej i ponownie wymieszaj. Przełóż masę do formy na herbatnikowy spód. Posyp sernik borówkami. Wstaw do lodówki.
Galaretkę rozpuść w 400 ml zagotowanej wody. Odstaw do schłodzenia. Tężejącą galaretką wlej na masę serową i borówki. Wstaw do lodówki. Podawaj sernik schłodzony.


Crust
180 g of gluten-free biscuits 
100 g lactose free butter

Cheesecake 
250 g cream cheese 
350 g mascarpone cheese 
3 tablespoons lemon juice 
125 g sugar 
300 g/ml heavy whipping cream 30% or 36%, chilled
3 teaspoons gelatin + 4 tablespoons cold water

150 g blueberries
1 berry fruit jelly + 400 ml of hot water

baking mold, diameter - 21 cm

Crust: Crush biscuits in a blender, add melted butter and mix thoroughly. Insert into the mold, spread evenly on the bottom. Put in the fridge for 15 minutes.
Cheese mass: In a small pot mix gelatine with cold water. Set aside. In a bowl put cream cheese, mascarpone cheese, sugar and lemon juice. Beat on medium speed until
fluffy and smooth. In the other bowl, beat whipping cream until stiff peaks form. Add whipped cream to the cheese mass and mix gently. Heat gently gelatine until dissolved, do not boil. Add gelatine to the cheese mass and mix again. Transfer the cheese mass into the mold with biscuit crust. Sprinkle cheesecake with blueberries. Put in the fridge.
Melt jelly in 400 ml boiled water. Leave to cool.
Pour the thickening(hardening) jelly on the cheese mass and blueberries. Put in the fridge. Serve cheesecake cold.
