Risotto z kurkami i pomidorem. Risotto with chanterelle mushrooms and tomato.


2 porcje
180 g ryżu do risotto Arborio
200 g grzybów kurki
4 łyżki masła
80 ml białego wytrawnego wina
1 ząbek czosnku, rozgnieciony
300 ml bulionu warzywnego ( 2 łyżeczki bezglutenowego bulionu Vegetable Bouillon powder, + 300 ml gorącej wody)
1 duży pomidor, pokrojony w kostkę
5 gałązek natki pietruszki, grubo posiekana
sól i pieprz do smaku
50 g drobno startego sera  Farmaggio mix lub parmezanu, opcjonalnie

Kurki, pomidor i natkę pietruszki umyj. Kurki podziel na duże kawałki, zostaw kilka małych kurek w całości do dekoracji. Dwie łyżki masła rozpuść na patelni, dodaj zmiażdzony czosnek i kurki, smaż około 3 minut. Dodaj ryż i przesmażaj na średnim ogniu, ciągle mieszając, aż wszystkie ziarenka pokryją się tłuszczem i ryż będzie szklisty. Ważne - ryż nie może się przypalić.
Następnie dolej wino i odparuj je. Zmniejsz ogień i zacznij dolewać po 100 ml bulionu. Tuż po wlaniu mieszaj, aż płyn się wchłonie. Potem powtarzaj czynność z dolewaniem bulionu i często mieszaj. Kiedy ryż przestanie wchłaniać płyn (gotowanie trwa ok. 20-30 minut), zdejmij patelnię z ognia, dodaj do risotto jedną łyżkę masła, posiekaną natkę pietruszki, pomidor i opcjonalnie ser. Dopraw solą i pieprzem, wymieszaj i pozostaw pod przykryciem na 3 minuty. Całe kurki podsmaż na łyżce masła, około 3 minut. Udekoruj risotto kurkami.

Zamiast świeżych kurek możesz użyć innych grzybów: prawdziwków, podgrzybków, borowików. Jeśli używasz suszonych grzybów, należy zalać je wrzątkiem i odstawić na pół godziny, a następnie dodać na końcu, jak ryż wchłonie już cały bulion.

180 g Arborio risotto rice
200 g chanterelle mushrooms
4 tablespoons butter
80 ml dry white wine
1 clove of garlic, crushed
300 ml vegetable stock (
2 teaspoons gluten-free broth  Vegetable Bouillon powder, marigold company + 300 ml of hot water)
1 large tomato, diced
5 sprigs of parsley, coarsely chopped
salt and pepper to taste
50 g finely grated
Farmaggio mix cheese or parmesan, optional

Wash
chanterelle mushrooms, tomato and parsley. Split chanterelle mushrooms into large pieces, leave a few small chanterelle mushrooms not divided (in one piece) to garnish. Melt two tablespoons of butter in a frying pan, add crushed garlic and chanterelles, cook about 3 minutes. Add risotto rice and fry over medium heat, stirring constantly, until all grains will cover with the fat. Important - rice can not burn.
Then add wine and evaporate it. Reduce the heat and start to pour 100 ml of broth. Immediately after pouring of broth stir until liquid is absorbed. Then repeat the procedure of broth pouring and stir frequently. When the rice stops absorbing liquid (
cooking takes about 20-30 minutes) remove the pan from the heat, add one tablespoon of butter, chopped parsley, tomato and optional cheese to risotto. Season with salt and pepper, mix well and leave it under cover for 3 minutes. Fry (in one piece) chanterellethe in one spoon of butter, about 3 minutes. Garnish risotto with fried mushrooms.
Instead of
fresh chanterelle you can use other mushrooms: bay bolete mushrooms, boletus mushrooms or porcini mushrooms. If you are using dried mushrooms, you should pour them over boiling water and leave for half an hour, then add mushrooms at the end of cooking, when rice has absorbed all the broth.
