Rolada matcha z wiśniami. Matcha roulade with sour cherries.



Biszkopt
5 jajek
5 - 6 czubatych łyżek cukru, jeżeli lubisz słodkie ciasto dodaj 6 łyżek
2 czubate łyżki skrobi ziemniaczanej
2 czubate łyżki mąki ekstra uniwersalny koncentrat mąki bezglutenowej (bezglutenowa skrobia pszenna, skrobia kukurydziana, mąka kukurydziana)*
1 czubata łyżka matcha
1 łyżeczka bezglutenowego proszku do pieczenia*

400 g wiśni bez pestek
300 ml śmietany 30%
1 łyżka matcha 
3 łyżki cukru pudru
1 łyżka żelatyny 
3 łyżki wody

*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).

Mąkę wymieszaj z proszkiem do pieczenia i matcha, przesiej przez sito. Białka ubij na sztywno z cukrem. Dodaj żółtka i ubijaj znowu na sztywno. Dodaj mąkę i dokładnie wymieszaj. Wylej ciasto na blachę wyłożoną pergaminem. Piecz ciasto 15 minut w temperaturze 170 stopni Celsjusza bez termoobiegu. Wyjmij ciepłe ciasto z piekarnika, odstaw na 5 minut. Wyjmij ciasto z blachy i zwiń w rulon, zawiń w bawełniany ręcznik i odstaw na 40 minut. Potem usuń delikatnie pergamin.
Śmietanę ubij z łyżką matcha i cukrem pudrem (oba przesiane przez sito). 1 łyżkę żelatyny wymieszaj z 3 łyżkami wody, lekko podgrzej, aż żelatyna się rozpuści. Wymieszaj z ubitą śmietaną. Śmietanę wyłóż na ciasto, pozostaw z jednej strony 2 cm nieposmarowane śmietaną, ułóż wiśnie na śmietanie. Zwiń ciasto delikatnie w rulon, zaczynając od posmarowanej części. Przełóż na talerz. Posyp ciasto cukrem pudrem. Ciasto przechowuj w lodówce. 

Sponge cake
5 eggs
5 - 6 heaped tablespoons of sugar, if you like sweet cakes add 6 tablespoons

2 heaped tablespoons of potato starch
2 heaped tablespoons of extra universal gluten-free flour concentrate (gluten-free wheat starch, corn stearch, corn flour)*

1 heaped tablespoons of  matcha
1 teaspoon of gluten-free baking powder*
  


400 g of sour cherries, without seed
300 ml of 30% cream
1 tablespoon of matcha
3 tablespoons of icing sugar
1 tablespoon of gelatin
3 tablespoons of water
 


* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).
baking tray, size: 28 cm x 20 cm
  
Mix flour with baking powder and matcha, sift. Whisk egg whites with sugar stiffly. Add egg yolks and whisk to stiff again. Add flour and mix thoroughly. Pour dough into a baking tray lined with parchment paper. Bake cake for 15 minutes at 170 degrees Celsius without air flow. Remove the warm cake from the oven, allow to sit for 5 minutes. Remove the cake from the baking tray and fold into a roll, wrap in cotton towel and let stand for 40 minutes. Then gently remove the parchment. 
Whisk the cream with a spoon of matcha and icing sugar (both sieved). 1 tablespoon of gelatin mix with 3 tablespoons of water, heat lightly until gelatin is dissolved. Stir with whipped cream. Lay off the whipped cream on the cake, leave 2 cm of cake was not spread with the cream, place cherries on the cream. Gently fold the cake and the cream into a roll, starting from spread parts of roulade. Transfer to a plate. Sprinkle the roulade with icing sugar. Store the cake in the fridge.
