Ciasto kokosowe migdałowe z agrestem. Bez zboża. Bez mleka. Coconut almond cake with gooseberry. Grain free. Milk free.


Inspiracją był przepis ze strony codojedzenia.pl http://codojedzenia.pl/ciasto-kokosowe-z-agrestem/, moja wersja jest bez glutenu i bez nabiału.

110 g (200 ml) mąki kokosowej /scroll down to the English version/
110 g (200 ml) mąki migdałowej 
100 g (150 ml) słodzonych wiórków kokosowych
150 - 300 ml mleka kokosowego
125 ml oleju
4 jajka
240 g (225 ml) cukru
20 g cukru waniliowego (nie wanilinowy) lub 1 łyżeczka ekstraktu waniliowego
2 łyżeczki bezglutenowego proszku do pieczenia* (można pominąć)
300 g agrestu
cukier puder do posypania

blacha o wymiarach: 21 x 25 cm
*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).  

Utrzyj jajka z cukrem i wanilią. Dodaj olej ubijając masę. Wymieszaj suche składniki w oddzielnej misce i dodaj do masy jajecznej na przemian z mlekiem kokosowym, mieszając lekko szpatułką. Gotowe ciasto wyłóż do formy wyłożonej pergaminem. Na wierzchu ułóż agrest . Lekko dociśnij agrest. Piecz ciasto w 160ºC z termoobiegiem (175
ºC bez termoobiegu) przez około 40 minut lub do tak zwanego suchego patyczka. Wyjmij ciasto z piekarnika i ostudź. Posyp cukrem pudrem przed podaniem.

110 g (200 ml) coconut flour
110 g (200 ml) almond flour
100 g (150 ml) sweetened coconut flakes
150 - 300 ml coconut milk
125 ml oil
4 eggs
240 g (225 ml) sugar
20 g vanilla sugar or 1 teaspoon vanilla extract
2 teaspoons gluten-free baking powder *(you can skip)
300 g gooseberries
icing
sugar for sprinkling

Mash eggs with the sugar and vanilla. Add oil, whisking mass. Mix the dry ingredients in a separate bowl and add to egg,
alternately with coconut milk, stirring gently with a spatula. Lay off ready dough on sheet lined with parchment paper. On top place gooseberry. Gently push them. Bake the cake at 160 ° C with air flow (175 ° C without the air flow) for about 40 minutes or so-called dry stick. Remove the cake from the oven and allow to cool. Sprinkle with icing sugar before serving.
