Bezglutenowa focaccia z oliwkami i pomidorkami. Gluten-free focaccia with olives and cherry tomatoes.



To pieczywo, w którym uwielbiam smak oliwek ...... i pomidory, pychota. Kilka kawałków to smaczna kolacja, nie trzeba nic więcej.

130 g skrobi kukurydzianej lub bezglutenowej skrobi pszennej*
80 g mąki ryżowej*
100 g mąki gryczanej*
50 g mąki z amarantusa*
12 - 15 g świeżych drożdży lub 1 + 1/2 łyżeczki suchych drożdży
320 ml ciepłej wody (35 - 40 stopni Celsjusza)
3 łyżki oliwy od suszonych pomidorów lub oliwa z oliwek
2 łyżeczki ziół prowansalskich 
1/2 łyżeczki soli
20 zielonych oliwek, pokrojone w plasterki
15 czarnych oliwek, pokrojone w plasterki
150 g (7 - 8) pomidorów koktajlowych, pokrojone na połówki
oliwa z oliwek do posmarowania ciasta
*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).

Drożdże wymieszaj z ciepłą wodą, dodaj mąkę, sól, łyżeczkę ziół prowansalskich. Dokładnie wyrób ciasto. Ciasto powinno mieć luźna konsystencję (luźniejsza niż na pizzę). Dodaj oliwę i 2/3 ilości oliwek, wyrób ciasto ponownie. Ciasto wylej na blachę wyłożoną pergaminem, ozdób oliwkami i pomidorkami (ułóż skórką do dołu), posyp ziołami prowansalskimi. Pozostaw ciasto do wyrośnięcia przykryte ściereczką. Gdy ciasto podwoi objętość (około 40 minut), delikatnie posmaruj oliwą i wstaw do nagrzanego piekarnika do 220 stopni Celsjusza bez termoobiegu, piecz 30 - 40 minut. Po 10 minutach zmniejsz temperaturę do 200 stopni Celsjusza. Wyjmij focaccię z pieca i przełóż na kratkę (koniecznie!) by ostygła.

80 g of rice flour*
100 g of buckwheat flour*
50 g of amaranth flour * 
12 - 15 g of fresh yeast or 1 + 1/2 teaspoon of dry yeast 
320 ml warm water (35 - 40 degrees Celsius)
3 tablespoons of oil from dried tomatoes or olive oil 
2 teaspoons of Provence herbs 
1/2 teaspoon of salt
20 green olives, sliced 
15 black olives, sliced 
150 g (7 - 8) of cherry tomatoes, cut in half 
olive oil for brushing the dough 
* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).

Mix yeast with warm water, add flour, salt and one teaspoon of Provence herbs. Knead the dough. The dough should have a slightly runny (fluent) consistency (more fluent than pizza). Add oil and 2/3 amount of olives, mix the dough again. Place the dough onto a baking tray lined with parchment paper, garnish the dough with olives and tomatoes (place the tomatoes skin-side down), sprinkle with Provence herbs. Leave the dough to rise covered with a cotton towel. When the dough is doubled in size (about 40 minutes), lightly brush one with olive oil and put in the preheated oven to 220 degrees Celsius without air flow, bake 30 - 40 minutes. After 15 minutes, reduce the temperature to 200 degrees Celsius. Remove the focaccia from the oven and place on the metal grille (necessarily!) to cool.
