Babeczki marchewkowe. Carrot cupcakes.


Polewa:
50 g masła
400 g serka twarogowego do sernika
200 g cukru pudru

Mikserem ucieraj serek wraz z masłem. Dodaj cukier puder, w 3 częściach, cały czas ucierając pomiędzy kolejnymi partiami. Wstaw do lodówki, aby polewa lekko stężała.

Ciasto: (22 babeczki)
3 jajka
250 g brązowego cukru trzcinowego
220 ml oleju roślinnego
200 ml 18% gęstej śmietanki
300 g drobno startej marchewki
75 g posiekanych orzechów włoskich
120 g drobno pokrojonego ananasa
60 g wiórków kokosowych
75 g mąki ziemniaczanej (kartoflanki)
150 g bezglutenowej skrobi pszennej lub skrobi kukurydzianej*
75 g mąki ryżowej*
1 i 1/2 łyżeczki cynamonu
1/2 łyżeczki soli
1 łyżeczka sody
1 łyżeczka proszku
do dekoracji migdały w czekoladzie

*Używam tylko produkty certyfikowane ze znakiem przekreślonego kłosa (patrz pod banerem z tytułem bloga PORADY).

Ubij jajka do podwojenia objętości. Dodaję cukier i dalej ubijaj aż masa będzie gładka i puszysta. Wciąż ubijając na wysokich obrotach, dolewaj ciągłym, cieniutkim strumieniem olej. Do powstałej masy dodaję marchewkę, ananasa, orzechy, wiórki kokosowe i delikatnie wymieszaj. Dodaj przesianą mąkę, cynamon, sodę, proszek do pieczenia i sól, delikatnie połącz wszystkie składniki. Dodaj śmietanę i ponownie wymieszaj. Przełóż masę do muffinek. Piecz muffinki w nagrzanym do 175 - 180 stopni C piekarniku przez 15 minut z włączonym termoobiegiem, potem zmniejsz temperaturę do 160 stopni C i piecz kolejne 20 minut.
Wystudzone ciasto posmaruj polewą i udekoruj migdałami w czekoladzie. Wstaw do lodówki.

Icing: 
50 g of butter 
400 g of  cottage cheese for cheesecake
200g of icing sugar

Mix cake with cream cheese and butter. Add powdered sugar in 3 parts, the whole time grind the mass. Put in the fridge to glaze slightly. 


Dough: (22 muffins)
3 eggs 
250 g of brown cane sugar 
220 ml of vegetable oil 
200 ml of 18% cream 
300 g of finely grated carrots
75 g of chopped walnuts 
120 g of chopped pineapple 
60 g of sweetened coconut flakes
75 g of potato starch 
150 g of gluten-free wheat starch or corn starch*
75 g of rice flour*
1 and 1/2 teaspoon of cinnamon
1/2 teaspoon of salt 
1 teaspoon of baking soda 
1 teaspoon of gluten-free baking powder
to decorate almonds in chocolate

* I only use certified products with the crossed grain symbol, gluten-free products available in Poland (side pannel: My internet shops with gluten-free products).

Beat the eggs until double in volume. Add the sugar and continue beating until eggs are smooth and fluffy. Still whisking at high speed, add oil. To the mass add carrots, pineapple, nuts, coconut and gently stir. Add the sieved flour, cinnamon, baking soda, baking powder and salt, gently combine all ingredients. Add a cream and stir again. Put the mass into muffins. Bake the muffins in preheated to 175 - 180 degrees C oven for 15 minutes with air flow, then reduce the temperature to 160 degrees C and bake for 20 minutes more.Cooled muffins spread icing and decorate with almonds in chocolate. Keep in the fridge.
